Personally I don't like the taste of dried oyster. Is dried oyster part of the ingredients for the traditionally hokkien chang? MY mum did not include it.
I miss homemade chang.

I dunno, mum used to make with dried oysters since young as dad loves them. My mother-in-law don't so I don't really know. Perhaps is personal preference.

What is your definition of good?
My version is it must not have too much of the kee taste and smell, smooth and fine for texture.

One of the years, I bought it from a veg stall in tekka market. Had smooth and fine texture without strong kee smell. Those given by relatives or friends tasted too much kee
