  we don't make the intestines but chye poh omelette is quite easy to make and is always eaten at home

  there is a trick to it..
  
  beat the egg quite vigourously to introduce lots of air bubbles into it.. add the condiments and turnip.. but not too much else it'll all collapse when cooking...
  
  wok has to be insanely hot.. smoking away..
  
  then add the oil, sunflower or peanut...
  
  while still beating the mixture, pour unto wok..
  
  allow to cook but never press.. it'll become light and fluffy

  sometimes i wonder.. she has this attention for pointless detail that makes her the stereotypical civil serpent, yet she goes around sneering at other civil serpents who gloss over useless detail but pay attention to the important bits...
